Ingredients

  • 4 endives
  • 50g butter
  • 50g flour
  • 500ml milk
  • 100g grated cheese (such as Gruyère)
  • Salt to taste
  • Black pepper to taste
  • Nutmeg to taste

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. Trim and blanch the endives in boiling salted water for about 10 minutes, then drain.
  3. In a saucepan, melt the butter and add the flour to make a roux.
  4. Gradually add the milk, stirring continuously until thickened to form béchamel sauce.
  5. Season with salt, pepper, and nutmeg.
  6. Place the endives in a baking dish and cover with the béchamel sauce.
  7. Sprinkle the grated cheese on top.
  8. Bake in the oven for about 20-25 minutes until golden and bubbly.

  • For a richer flavor, use a combination of cheeses.
