- 4 endives
- 50g butter
- 50g flour
- 500ml milk
- 100g grated cheese (such as Gruyère)
- Salt to taste
- Black pepper to taste
- Nutmeg to taste
Instructions
- Preheat the oven to 200°C (392°F).
- Trim and blanch the endives in boiling salted water for about 10 minutes, then drain.
- In a saucepan, melt the butter and add the flour to make a roux.
- Gradually add the milk, stirring continuously until thickened to form béchamel sauce.
- Season with salt, pepper, and nutmeg.
- Place the endives in a baking dish and cover with the béchamel sauce.
- Sprinkle the grated cheese on top.
- Bake in the oven for about 20-25 minutes until golden and bubbly.
Notes
- For a richer flavor, use a combination of cheeses.
- Be careful not to overcook the endives during blanching.
