Ingredients

  • 4 bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 4 eggs
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef, onion, and garlic until the beef is browned.
  4. Add the cooked rice, paprika, cumin, salt, and pepper. Mix well.
  5. Stuff the mixture into the bell peppers, then crack an egg on top of each stuffed pepper.
  6. Place the peppers in a baking dish and cover with foil.
  7. Bake for 30 minutes, then remove foil and sprinkle with cheese.
  8. Bake for another 10-15 minutes, until the eggs are set.

Notes

  • For a vegetarian version, replace ground beef with black beans or lentils.
  • These can be made ahead of time and reheated.
