- 4 bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 4 eggs
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the ground beef, onion, and garlic until the beef is browned.
- Add the cooked rice, paprika, cumin, salt, and pepper. Mix well.
- Stuff the mixture into the bell peppers, then crack an egg on top of each stuffed pepper.
- Place the peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove foil and sprinkle with cheese.
- Bake for another 10-15 minutes, until the eggs are set.
Notes
- For a vegetarian version, replace ground beef with black beans or lentils.
- These can be made ahead of time and reheated.
