Ingredients
Scale
- 3 cups Rice Chex cereal
- 1 cup melted white chocolate
- 1/2 cup crushed freeze-dried strawberries
- 1 cup confectioners’ sugar
- 1/4 teaspoon sea salt
- 1 teaspoon pure vanilla extract
Instructions
- Place the Rice Chex cereal in a spacious bowl and set it aside.
- In a microwave-safe container, heat the white chocolate in short bursts of 30 seconds, stirring after each interval until it becomes velvety smooth.
- Once melted, mix in the vanilla extract and sea salt until fully incorporated.
- Drizzle the melted white chocolate over the Rice Chex, gently folding the cereal until every piece is coated.
- In another bowl, blend the crushed freeze-dried strawberries with the confectioners’ sugar.
- Transfer the chocolate-covered cereal into the strawberry-sugar mixture, tossing carefully to ensure an even coating.
- Spread the mixture onto a parchment-lined baking sheet and allow it to cool for approximately 30 minutes.
- After cooling, break it into bite-sized clusters and enjoy!
Notes
- For a richer flavor, replace half of the white chocolate with milk chocolate chips.
- Top with additional crushed freeze-dried strawberries for an extra burst of flavor and a pop of color.
