- 1 pound strawberries, hulled and chopped
- 2 cups cake crumbs
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips
- 1 tablespoon coconut oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the chopped strawberries with the cake crumbs.
- In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Combine the strawberry mixture with the cream cheese mixture.
- Form into small balls and place on a baking sheet.
- Bake for 15-20 minutes until set and slightly golden.
- In a microwave-safe bowl, melt the white chocolate chips with coconut oil until smooth.
- Dip each truffle into the melted chocolate and return to the baking sheet.
- Chill in the fridge until the chocolate is set.
Notes
- For added flavor, you can mix in some lemon zest with the strawberries.
- These truffles can be stored in the refrigerator for up to a week.
