Delicious and easy-to-make strawberry shortcake truffles that are perfect for any occasion.

Ingredients

  • 1 pound strawberries, hulled and chopped
  • 2 cups cake crumbs
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the chopped strawberries with the cake crumbs.
  3. In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Combine the strawberry mixture with the cream cheese mixture.
  5. Form into small balls and place on a baking sheet.
  6. Bake for 15-20 minutes until set and slightly golden.
  7. In a microwave-safe bowl, melt the white chocolate chips with coconut oil until smooth.
  8. Dip each truffle into the melted chocolate and return to the baking sheet.
  9. Chill in the fridge until the chocolate is set.

Notes

  • For added flavor, you can mix in some lemon zest with the strawberries.
