Ingredients
Scale
- 1 pound of thinly sliced beef (sirloin or ribeye works best)
- 1 tablespoon of extra virgin olive oil
- 1 medium onion, sliced thinly
- 1 medium bell pepper, sliced thinly
- 1 teaspoon of garlic powder
- Salt and freshly ground black pepper to taste
- 8 ounces of softened cream cheese
- 1 cup of shredded provolone cheese
- 1 cup of shredded mozzarella cheese
- 1 teaspoon of Worcestershire sauce
- 1 teaspoon of Dijon mustard
- 1 package (8 oz) of low-carb tortillas
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onion and bell pepper, sautéing until tender and fragrant, about 5-7 minutes.
- Season with garlic powder, salt, and pepper, then remove from heat and allow to cool slightly.
- In a separate bowl, blend the softened cream cheese with provolone, mozzarella, Worcestershire sauce, and Dijon mustard until smooth and creamy.
- Lay a low-carb tortilla flat on a clean surface and spread the cheesy mixture across it.
- Layer on the sautéed beef and vegetables, then roll the tortilla up tightly.
- Preheat your oven to 375°F and arrange the roll-ups on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes, or until the cheese is melted and the edges are golden.
- Allow to cool for a few minutes before serving. Enjoy warm!
Notes
- For an extra kick, consider adding Italian herbs or crushed red pepper flakes to the cheese mixture.
- Swap the beef for cooked chicken or turkey for a delightful twist.
