A festive and easy recipe for gluten-free Christmas stollen, perfect for holiday celebrations.

  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 3 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk (dairy or non-dairy)
  • 1 cup assorted dried fruits (like raisins, currants, and diced dried apricots)
  • 1/2 cup chopped nuts (such as almonds or walnuts)
  • 1/4 cup grated orange zest
  • 1/4 cup powdered sugar (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a spacious bowl, combine the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt, mixing well.
  3. In a separate bowl, beat the softened butter and sugar together until light and airy.
  4. Incorporate the eggs one at a time, ensuring each is fully blended before adding the next.
  5. Mix in the vanilla extract and milk until smooth.
  6. Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
  7. Carefully add in the dried fruits, chopped nuts, and orange zest, mixing until evenly distributed.
  8. Shape the dough into a loaf approximately 1 inch thick and place it on the prepared baking sheet.
  9. Bake for 30-35 minutes, or until the loaf is golden and a toothpick inserted in the center comes out clean.
  10. Let it cool on the baking sheet for about 10 minutes before moving it to a wire rack to cool completely.
  11. Once cooled, dust the top with powdered sugar before slicing and serving.

Notes

  • Add a teaspoon of almond extract for a delightful flavor boost.
  • Swap the mixed dried fruits for chocolate chips or coconut flakes for a unique twist.
