- 2 medium apples, peeled, cored, and chopped (approximately 2 cups)

Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan and place a circle of parchment paper at the bottom.
- Toss the chopped apples with 1/4 cup of the sugar and let them sit to draw out their juices.
- In a separate bowl, combine the melted butter with the remaining sugar, eggs, and vanilla extract, whisking until smooth and creamy.
- Sift together the flour, baking powder, salt, cinnamon, and nutmeg in another bowl.
- Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just blended.
- Fold in the apple mixture along with any juices that have formed.
- Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
- If desired, sprinkle with powdered sugar before serving.
