Ingredients

- 12 small potatoes
- 3 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 teaspoon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped chives
Instructions
- Boil the small potatoes until tender, about 15 minutes. Let them cool.
- Cut the cooled potatoes in half and scoop out a little of the insides.
- In a bowl, mash the hard-boiled eggs with mayonnaise, mustard, salt, and pepper.
- Mix in the chopped chives.
- Fill each potato half with the egg mixture.
- Garnish with additional chives if desired.
- Serve chilled or at room temperature.
Notes
- For a bit of heat, add a dash of hot sauce to the mixture.
- This recipe can be made ahead of time and stored in the refrigerator.
