Easy egg sized deviled potatoes

A delicious twist on traditional deviled eggs using small potatoes.

Ingredients

  • 12 small potatoes
  • 3 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped chives

Instructions

  1. Boil the small potatoes until tender, about 15 minutes. Let them cool.
  2. Cut the cooled potatoes in half and scoop out a little of the insides.
  3. In a bowl, mash the hard-boiled eggs with mayonnaise, mustard, salt, and pepper.
  4. Mix in the chopped chives.
  5. Fill each potato half with the egg mixture.
  6. Garnish with additional chives if desired.
  7. Serve chilled or at room temperature.

Notes

  • For a bit of heat, add a dash of hot sauce to the mixture.
  • This recipe can be made ahead of time and stored in the refrigerator.
