Ingredients

  • 1 duck, cut into pieces
  • 1 cup duck giblets, chopped
  • 4 cups chicken or duck stock
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon soy sauce
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat and brown the duck pieces on all sides.
  2. Add the giblets, onion, garlic, carrots, and celery to the pot, cooking until softened.
  3. Pour in the stock and bring to a boil.
  4. Add the thyme, rosemary, soy sauce, salt, and pepper.
  5. Reduce heat and let simmer for about 1.5 to 2 hours.
  6. Adjust seasoning as needed before serving.
