Ingredients

  • 1 cup rye flour
  • 1/2 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine rye flour, all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chocolate chips.
  5. Divide the batter among the muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
