Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 tsp salt
  • 1/4 cup ice water
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp unsalted butter
  • 3 large egg whites
  • 1/4 tsp cream of tartar
  • 1/2 cup granulated sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water until dough forms.
  3. Roll out dough and fit into a tart pan. Bake for 20 minutes until light golden. Let cool.
  4. In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in water. Cook over medium heat until thickened.
  5. In a bowl, whisk egg yolks. Slowly whisk in a bit of the hot mixture, then return it all to the saucepan. Stir in lemon juice and zest. Cook for 2 more minutes, then stir in butter.
  6. Pour lemon filling into the cooled tart shell.
  7. For meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  8. Spread meringue over the lemon filling and bake for 10 minutes until golden.
  9. Let cool before serving.
