- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 tsp salt
- 1/4 cup ice water
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 tsp salt
- 1 1/2 cups water
- 3 large egg yolks
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp unsalted butter
- 3 large egg whites
- 1/4 tsp cream of tartar
- 1/2 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water until dough forms.
- Roll out dough and fit into a tart pan. Bake for 20 minutes until light golden. Let cool.
- In a saucepan, combine sugar, cornstarch, and salt. Gradually stir in water. Cook over medium heat until thickened.
- In a bowl, whisk egg yolks. Slowly whisk in a bit of the hot mixture, then return it all to the saucepan. Stir in lemon juice and zest. Cook for 2 more minutes, then stir in butter.
- Pour lemon filling into the cooled tart shell.
- For meringue, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form.
- Spread meringue over the lemon filling and bake for 10 minutes until golden.
- Let cool before serving.

- For best texture, serve on the same day you make the tart.
- Store leftovers in the refrigerator to maintain freshness.
