Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 2 tablespoons pandan extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a madeleine pan.
  2. In a bowl, whisk together melted butter and sugar until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in the pandan extract.
  5. In a separate bowl, combine flour, baking powder, coconut, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Let the batter rest for 15 minutes.
  8. Spoon the batter into the madeleine mold, filling each cavity about 3/4 full.
  9. Bake for 10-12 minutes, or until golden and firm to the touch.
  10. Remove from the oven and let cool for a few minutes before transferring to a wire rack.
