- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 2 tablespoons pandan extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C) and grease a madeleine pan.
- In a bowl, whisk together melted butter and sugar until combined.
- Add eggs one at a time, mixing well after each addition.
- Stir in the pandan extract.
- In a separate bowl, combine flour, baking powder, coconut, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Let the batter rest for 15 minutes.
- Spoon the batter into the madeleine mold, filling each cavity about 3/4 full.
- Bake for 10-12 minutes, or until golden and firm to the touch.
- Remove from the oven and let cool for a few minutes before transferring to a wire rack.
