Ingredients

  • 8 ounces bittersweet chocolate
  • 1 cup sugar
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2 large pears, sliced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons honey
  • 1/4 cup water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Melt the chocolate and olive oil together in a saucepan over low heat.
  3. In a bowl, whisk the eggs and sugar until light and frothy.
  4. Add the vanilla and melted chocolate mixture to the eggs.
  5. In another bowl, sift together cocoa powder and salt, then fold into the chocolate mixture.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes.
  7. In the meantime, prepare the spiced pears by simmering sliced pears with cinnamon, nutmeg, honey, and water until tender.
  8. Let the cake cool before serving it topped with the spiced pears.
