- 1 cup olive oil
- 8 ounces bittersweet chocolate
- 1 cup sugar
- 5 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 2 large pears, sliced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons honey
- 1/4 cup water
Instructions
- Preheat the oven to 350°F (175°C) and grease a cake pan.
- Melt the chocolate and olive oil together in a saucepan over low heat.
- In a bowl, whisk the eggs and sugar until light and frothy.
- Add the vanilla and melted chocolate mixture to the eggs.
- In another bowl, sift together cocoa powder and salt, then fold into the chocolate mixture.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- In the meantime, prepare the spiced pears by simmering sliced pears with cinnamon, nutmeg, honey, and water until tender.
- Let the cake cool before serving it topped with the spiced pears.
Notes
- For a deeper flavor, let the pears sit with the spices for an hour before cooking.
- This cake can be served warm or chilled.
