This Decadent Chocolate Mousse Torte features layers of rich chocolate mousse and a buttery crust that is sure to impress any chocolate lover.

Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 8 ounces semisweet chocolate, chopped
  • 4 tablespoons unsalted butter
  • 4 large eggs, separated
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy cream
  • 2 tablespoons powdered sugar
  • 1 ounce dark chocolate, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine cookie crumbs and melted butter.
  3. Press mixture into the bottom of a springform pan.
  4. Bake for 10 minutes, then let cool.
  5. Melt semisweet chocolate and 4 tablespoons butter over low heat, stirring until smooth.
  6. In a separate bowl, beat egg yolks and sugar until pale and thick.
  7. Add chocolate mixture and vanilla extract to the yolk mixture, mixing well.
  8. In another bowl, whisk egg whites until stiff peaks form.
  9. Fold egg whites into chocolate mixture gently.
  10. In yet another bowl, whip heavy cream with powdered sugar until soft peaks form.
  11. Fold whipped cream into the chocolate mixture until combined.
  12. Pour mousse over cooled crust and refrigerate for at least 4 hours, or until set.
  13. Before serving, garnish with grated dark chocolate.

  • For a richer flavor, use high-quality chocolate.
  • Make sure the mousse is fully set before serving.
