- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 8 ounces semisweet chocolate, chopped
- 4 tablespoons unsalted butter
- 4 large eggs, separated
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups heavy cream
- 2 tablespoons powdered sugar
- 1 ounce dark chocolate, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine cookie crumbs and melted butter.
- Press mixture into the bottom of a springform pan.
- Bake for 10 minutes, then let cool.
- Melt semisweet chocolate and 4 tablespoons butter over low heat, stirring until smooth.
- In a separate bowl, beat egg yolks and sugar until pale and thick.
- Add chocolate mixture and vanilla extract to the yolk mixture, mixing well.
- In another bowl, whisk egg whites until stiff peaks form.
- Fold egg whites into chocolate mixture gently.
- In yet another bowl, whip heavy cream with powdered sugar until soft peaks form.
- Fold whipped cream into the chocolate mixture until combined.
- Pour mousse over cooled crust and refrigerate for at least 4 hours, or until set.
- Before serving, garnish with grated dark chocolate.
Notes
- For a richer flavor, use high-quality chocolate.
- Make sure the mousse is fully set before serving.
- Store leftovers in the refrigerator for up to 3 days.
