Instructions
- Preheat your oven to 300°F (150°C).
- In a bowl, whisk together almond flour, powdered sugar, and cocoa powder.
- In a separate bowl, beat egg whites until soft peaks form. Gradually add granulated sugar and cream of tartar, and continue beating until glossy and stiff peaks form.
- Fold the dry mixture into the egg whites until just combined.
- Pipe the mixture onto prepared baking sheets and let them rest for 30 minutes.
- Bake for 15-20 minutes, then let cool completely.
- To make the filling, beat together the softened butter and heavy cream until creamy. Gradually add caramel sauce.
- Sandwich the macarons with the caramel buttercream filling.
