Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk, room temperature
  • ½ cup vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup fresh blackberries, mashed
  • 1 tablespoon lemon juice
  • 8 ounces dark chocolate, chopped (for ganache)
  • 1 cup heavy cream (for ganache)
  • 1 tablespoon unsalted butter (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, vanilla extract, mashed blackberries, and lemon juice until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  7. For the ganache, place the chopped dark chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  8. Pour the hot cream over the chocolate and let it sit for 2-3 minutes. Add the butter and stir until smooth and glossy.
  9. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of ganache on top, then place the second layer on top.
  10. Pour the remaining ganache over the top of the cake, allowing it to drip down the sides.
  11. Let the ganache set for about 30 minutes before slicing.

Notes

  • For a lighter version, substitute half of the all-purpose flour with almond flour.
  • For added texture, fold in some whole blackberries into the batter before baking.
