- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup buttermilk, room temperature
- ½ cup vegetable oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup fresh blackberries, mashed
- 1 tablespoon lemon juice
- 8 ounces dark chocolate, chopped (for ganache)
- 1 cup heavy cream (for ganache)
- 1 tablespoon unsalted butter (for ganache)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
- In another bowl, mix the buttermilk, vegetable oil, eggs, vanilla extract, mashed blackberries, and lemon juice until smooth.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
- For the ganache, place the chopped dark chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
- Pour the hot cream over the chocolate and let it sit for 2-3 minutes. Add the butter and stir until smooth and glossy.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of ganache on top, then place the second layer on top.
- Pour the remaining ganache over the top of the cake, allowing it to drip down the sides.
- Let the ganache set for about 30 minutes before slicing.
Notes
- For a lighter version, substitute half of the all-purpose flour with almond flour.
- For added texture, fold in some whole blackberries into the batter before baking.
