  • 1 cup dark chocolate chips (60-70% cocoa)
  • 2 tablespoons unsalted butter
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup fresh or frozen cherries, pitted and chopped
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 375°F and prepare four ramekins by greasing them with butter and lightly coating them with granulated sugar.
  2. In a microwave-safe bowl, combine the dark chocolate chips and butter. Heat in the microwave, stirring every 30 seconds until melted and smooth. Allow to cool slightly.
  3. In a separate bowl, whisk the egg yolks with the granulated sugar, vanilla extract, and salt until light and fluffy. Gradually incorporate the cooled chocolate mixture.
  4. In another bowl, whip the egg whites until stiff peaks form. Carefully fold the whipped egg whites into the chocolate mixture in three parts, then gently mix in the chopped cherries.
  5. Spoon the soufflé batter evenly into the prepared ramekins and place them on a baking sheet. Bake for 12-15 minutes, until risen and set around the edges but soft in the center.
  6. Remove from the oven and let rest for a minute. Optionally, sprinkle with powdered sugar before serving.
