- 1 cup dark chocolate chips (60-70% cocoa)
- 2 tablespoons unsalted butter
- 2 large eggs, separated
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fresh or frozen cherries, pitted and chopped
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 375°F and prepare four ramekins by greasing them with butter and lightly coating them with granulated sugar.
- In a microwave-safe bowl, combine the dark chocolate chips and butter. Heat in the microwave, stirring every 30 seconds until melted and smooth. Allow to cool slightly.
- In a separate bowl, whisk the egg yolks with the granulated sugar, vanilla extract, and salt until light and fluffy. Gradually incorporate the cooled chocolate mixture.
- In another bowl, whip the egg whites until stiff peaks form. Carefully fold the whipped egg whites into the chocolate mixture in three parts, then gently mix in the chopped cherries.
- Spoon the soufflé batter evenly into the prepared ramekins and place them on a baking sheet. Bake for 12-15 minutes, until risen and set around the edges but soft in the center.
- Remove from the oven and let rest for a minute. Optionally, sprinkle with powdered sugar before serving.
Notes
- For extra flavor, add a tablespoon of espresso powder to the chocolate mixture.
- Cherries can be substituted with raspberries or strawberries for a variation.
