Ingredients

  • 1 cup chopped dandelion greens
  • 1 cup chopped nettle leaves
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 cup milk
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, mix the flour, baking powder, and salt.
  6. Add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with flour.
  7. Fold in the chopped dandelion greens and nettle leaves.
  8. Pour the batter into a greased cake pan.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool before serving.
