Ingredients
Scale
- 1 large cucumber
- 1 cup ricotta cheese
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 1 tablespoon lime juice
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup diced bell pepper
- 1/4 cup diced radishes
- Whole grain or herb-infused wraps (optional)
Instructions
- Begin by slicing the cucumber into thin, long strips, approximately 1/4 inch thick. If the cucumber is particularly large, consider halving it lengthwise first for easier handling.
- In a mixing bowl, blend the ricotta cheese with parsley, lime juice, onion powder, salt, and pepper until the mixture is smooth and creamy.
- On a clean surface, arrange the cucumber strips. If you are using wraps, spread a generous layer of the ricotta mixture on each wrap before layering the cucumber strips on top.
- Dollop a portion of the ricotta mixture onto each cucumber strip and sprinkle with diced bell peppers and radishes for added flavor and crunch.
- Carefully roll the cucumber strips or fold the wraps over the filling, securing them with toothpicks if needed.
- Enjoy immediately or let them chill in the fridge for about 15-30 minutes for a refreshing treat.
Notes
- For an extra crunch, consider adding chopped celery or sliced jalapeños to the filling.
- Feel free to experiment with different herbs like cilantro or mint for a fresh twist.
