- 4 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 3 eggs
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the spinach, ricotta, Parmesan, breadcrumbs, eggs, nutmeg, salt, and pepper.
- Grease a baking dish with olive oil and pour the spinach mixture into it.
- Spread evenly and sprinkle additional breadcrumbs on top.
- Bake for 30-35 minutes until golden brown and set.
- Let cool for a few minutes before serving.
Notes
- For added crunch, you can top with crushed nuts.
- This dish can be made ahead of time and reheated.
