A deliciously crunchy spinach casserole that combines fresh spinach with a crispy topping.

Ingredients

  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 3 eggs
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the spinach, ricotta, Parmesan, breadcrumbs, eggs, nutmeg, salt, and pepper.
  3. Grease a baking dish with olive oil and pour the spinach mixture into it.
  4. Spread evenly and sprinkle additional breadcrumbs on top.
  5. Bake for 30-35 minutes until golden brown and set.
  6. Let cool for a few minutes before serving.

Notes

  • For added crunch, you can top with crushed nuts.
  • This dish can be made ahead of time and reheated.
