- 1 cup unsalted butter
- 1 cup granulated sugar

- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup peach jam
- 1/4 cup powdered sugar
- 1/4 teaspoon almond extract
- Red gel food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture and stir until combined.
- Shape the dough into small balls and place them on a baking sheet.
- Bake for 12-15 minutes or until lightly golden.
- Once cooled, cut the cookies in half and fill with peach jam.
- Dust with powdered sugar and add food coloring to resemble peaches if desired.
Notes
- These cookies can be made ahead of time and stored in an airtight container.
- For a variation, try using apricot jam instead of peach.
