Delicious Croatian peach cookies made with a sweet filling, resembling the shape of peaches.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup peach jam
  • 1/4 cup powdered sugar
  • 1/4 teaspoon almond extract
  • Red gel food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture and stir until combined.
  6. Shape the dough into small balls and place them on a baking sheet.
  7. Bake for 12-15 minutes or until lightly golden.
  8. Once cooled, cut the cookies in half and fill with peach jam.
  9. Dust with powdered sugar and add food coloring to resemble peaches if desired.

Notes
