  • 2 tablespoons tamarind concentrate
  • 1 tablespoon maple syrup or sugar (to taste)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. In a mixing bowl, whisk together the chickpea flour, baking powder, turmeric, cumin, coriander, cayenne pepper, and salt until well combined.
  2. Slowly pour in the water, stirring continuously until the mixture forms a thick, smooth batter that clings to the spoon.
  3. Gently fold in the finely chopped vegetables, ensuring they are evenly coated with the batter.
  4. Heat oil in a deep skillet over medium heat.
  5. To check if the oil is hot enough, drop a small spoonful of batter into the oil; it should bubble and float to the top.
  6. Carefully spoon the batter-coated vegetables into the hot oil, making sure not to overcrowd the pan.
  7. Fry until each fritter is golden brown and crispy, about 3-4 minutes on each side.
  8. Once cooked, remove them with a slotted spoon and let them drain on paper towels to eliminate excess oil.
  9. For the tangy tamarind yogurt sauce, combine the yogurt, tamarind concentrate, maple syrup (or sugar), salt, and ground cumin in a small bowl.
  10. Mix until smooth and well blended.
