- 1/4 teaspoon ground cumin
Instructions
- In a mixing bowl, whisk together the chickpea flour, baking powder, turmeric, cumin, coriander, cayenne pepper, and salt until well combined.
- Slowly pour in the water, stirring continuously until the mixture forms a thick, smooth batter that clings to the spoon.
- Gently fold in the finely chopped vegetables, ensuring they are evenly coated with the batter.
- Heat oil in a deep skillet over medium heat.
- To check if the oil is hot enough, drop a small spoonful of batter into the oil; it should bubble and float to the top.
- Carefully spoon the batter-coated vegetables into the hot oil, making sure not to overcrowd the pan.
- Fry until each fritter is golden brown and crispy, about 3-4 minutes on each side.
- Once cooked, remove them with a slotted spoon and let them drain on paper towels to eliminate excess oil.
- For the tangy tamarind yogurt sauce, combine the yogurt, tamarind concentrate, maple syrup (or sugar), salt, and ground cumin in a small bowl.
- Mix until smooth and well blended.
