Instructions

  1. In a large bowl, beat the softened cream cheese with the confectioners’ sugar and vanilla extract until the mixture is light and fluffy.
  2. Gently fold in the finely chopped cotton candy, ensuring it’s well incorporated.
  3. Scoop out portions of the mixture and roll them into small balls, roughly the size of a golf ball, and arrange them on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the freezer for about an hour, allowing the cheesecake bites to firm up.
  5. While the bites are chilling, melt the white chocolate and coconut oil together in a microwave-safe bowl, heating in short bursts and stirring until smooth.
  6. In another bowl, mix the crushed graham crackers with the puffed rice cereal.
  7. Once the cheesecake bites are firm, dip each one into the melted white chocolate, letting any excess drip off, then roll them in the graham cracker and puffed rice mixture until fully coated.
  8. Transfer the coated bites back to the parchment-lined sheet and freeze for an additional 30 minutes to set completely.
