- 4 large eggs
- 2 tablespoons heavy cream

- 4 ounces smoked salmon, chopped
- 1 tablespoon chives, chopped
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the eggs, heavy cream, salt, and pepper.
- In a non-stick skillet over medium-low heat, melt the butter.
- Add the egg mixture to the skillet and gently stir with a spatula until the eggs begin to set.
- Fold in the smoked salmon and chives when the eggs are just about cooked but still soft and creamy.
- Remove from heat and serve immediately.

- For extra flavor, add a pinch of dill or lemon zest.
