- 1 cup amaranth
- 4 cups coconut milk
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup fresh mango, diced
- 1/4 cup toasted coconut flakes
Instructions
- In a medium saucepan, combine the amaranth and coconut milk.
- Bring to a boil, then reduce heat to low and simmer for about 20 minutes, stirring occasionally.
- Add maple syrup, vanilla extract, and salt. Stir well and cook for another 5 minutes.
- Remove from heat and let it sit for a few minutes to thicken.
- Serve warm or chilled, topped with fresh mango and toasted coconut flakes.
Notes
- This pudding can be stored in the refrigerator for up to 3 days.
- For a thicker consistency, add less coconut milk.
