- 1 cup granulated sugar
- 2 tablespoons water
- 2 cups whole milk
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- In a saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves, then increase the heat and cook without stirring until it becomes a golden caramel.
- In a separate saucepan, whisk together the milk, cornstarch, and salt. Bring to a simmer over medium heat, stirring frequently until thickened.
- In a bowl, whisk the eggs and slowly add some of the hot mixture to temper them. Then whisk the egg mixture back into the saucepan.
- Cook for an additional few minutes until slightly thickened. Remove from heat and stir in the vanilla and butter.
- Pour the pudding into individual serving dishes and let it cool. Refrigerate until set.
Notes
- For a richer flavor, use brown sugar instead of granulated sugar.
- Make sure to stir continuously to avoid lumps.
