Ingredients

  • 1 cup granulated sugar
  • 2 tablespoons water
  • 2 cups whole milk
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

Instructions

  1. In a saucepan, combine the sugar and water. Cook over medium heat until the sugar dissolves, then increase the heat and cook without stirring until it becomes a golden caramel.
  2. In a separate saucepan, whisk together the milk, cornstarch, and salt. Bring to a simmer over medium heat, stirring frequently until thickened.
  3. In a bowl, whisk the eggs and slowly add some of the hot mixture to temper them. Then whisk the egg mixture back into the saucepan.
  4. Cook for an additional few minutes until slightly thickened. Remove from heat and stir in the vanilla and butter.
  5. Pour the pudding into individual serving dishes and let it cool. Refrigerate until set.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Make sure to stir continuously to avoid lumps.
