- 4 pounds beef short ribs
- 1 cup cranberry sauce
- 2 chipotle peppers in adobo sauce, chopped
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 onion, chopped
- 1 cup beef broth
Instructions
- Preheat the oven to 300°F (150°C).
- Season the short ribs with salt and pepper.
- In a large skillet, sear the short ribs on all sides until browned.
- In a bowl, combine cranberry sauce, chipotle peppers, brown sugar, soy sauce, garlic, cumin, and paprika.
- Place the onion and short ribs in a roasting pan, then pour the cranberry chipotle mixture over the top.
- Add beef broth to the pan.
- Cover with foil and bake for 3 hours, or until the meat is tender.
- Remove the foil for the last 30 minutes to caramelize the glaze.
- Let the ribs rest for 10 minutes before serving.
Notes
- You can adjust the amount of chipotle peppers based on your spice preference.
- Serve with mashed potatoes or a fresh green salad.
