Ingredients

  • 4 pounds beef short ribs
  • 1 cup cranberry sauce
  • 2 chipotle peppers in adobo sauce, chopped
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 onion, chopped
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the short ribs with salt and pepper.
  3. In a large skillet, sear the short ribs on all sides until browned.
  4. In a bowl, combine cranberry sauce, chipotle peppers, brown sugar, soy sauce, garlic, cumin, and paprika.
  5. Place the onion and short ribs in a roasting pan, then pour the cranberry chipotle mixture over the top.
  6. Add beef broth to the pan.
  7. Cover with foil and bake for 3 hours, or until the meat is tender.
  8. Remove the foil for the last 30 minutes to caramelize the glaze.
  9. Let the ribs rest for 10 minutes before serving.

  • You can adjust the amount of chipotle peppers based on your spice preference.
  • Serve with mashed potatoes or a fresh green salad.
