Cranberry and Brie Filo Crackers are a delicious and easy-to-make snack that combines the tartness of cranberries with the creaminess of Brie cheese, all wrapped in crispy filo pastry.

Ingredients

  • 8 sheets of filo pastry
  • 1 cup of fresh or frozen cranberries
  • 1 tablespoon of sugar
  • 1 tablespoon of water
  • 8 ounces of Brie cheese, cut into small pieces
  • 1/4 cup of melted butter
  • 1 teaspoon of fresh thyme leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a small saucepan, combine the cranberries, sugar, and water. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. Remove from heat and let cool.
  3. Lay one sheet of filo pastry on a clean surface and brush with melted butter. Place another sheet on top and brush with more butter. Repeat this process until all 8 sheets are stacked and buttered.
  4. Cut the stacked filo into squares, about 3×3 inches.
  5. Place a piece of Brie in the center of each square, add a spoonful of the cranberry mixture, and sprinkle with thyme, salt, and pepper if desired.
  6. Fold the corners of the filo over the filling to create a small packet and place them seam-side down on a baking sheet lined with parchment paper.
  7. Brush the tops of the packets with any remaining melted butter.
  8. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  9. Let cool for a few minutes before serving. Enjoy warm.

Notes

  • For a sweeter twist, add a drizzle of honey over the top before serving.
  • You can substitute the cranberries with a fruit preserve of your choice, such as raspberry or apricot, for a different flavor profile.
