Ingredients

- 8 sheets of filo pastry
- 1 cup of fresh or frozen cranberries
- 1 tablespoon of sugar
- 1 tablespoon of water
- 8 ounces of Brie cheese, cut into small pieces
- 1/4 cup of melted butter
- 1 teaspoon of fresh thyme leaves (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- In a small saucepan, combine the cranberries, sugar, and water. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the cranberries burst and the mixture thickens. Remove from heat and let cool.
- Lay one sheet of filo pastry on a clean surface and brush with melted butter. Place another sheet on top and brush with more butter. Repeat this process until all 8 sheets are stacked and buttered.
- Cut the stacked filo into squares, about 3×3 inches.
- Place a piece of Brie in the center of each square, add a spoonful of the cranberry mixture, and sprinkle with thyme, salt, and pepper if desired.
- Fold the corners of the filo over the filling to create a small packet and place them seam-side down on a baking sheet lined with parchment paper.
- Brush the tops of the packets with any remaining melted butter.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Let cool for a few minutes before serving. Enjoy warm.
Notes
- For a sweeter twist, add a drizzle of honey over the top before serving.
- You can substitute the cranberries with a fruit preserve of your choice, such as raspberry or apricot, for a different flavor profile.
