Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine grated courgette, flour, baking powder, salt, and pepper.
- In another bowl, whisk together eggs and olive oil, then add to the dry ingredients.
- Fold in Parmesan cheese and basil.
- Pour the batter into a greased baking dish.
- Bake for 30-40 minutes, or until golden brown and set.
- Let cool slightly before slicing and serving.
