- 2 cups cornbread mix
- 1 cup milk
- 1 large egg
- 1 pound ground beef or turkey
- 1 packet taco seasoning (1 ounce)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes (fresh or canned)
- 1/4 cup chopped green onions (optional)
- Sour cream and avocado for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
- In a mixing bowl, whisk together the cornbread mix, milk, and egg until just blended, then set aside.
- In a skillet over medium heat, brown the ground beef or turkey, draining any excess fat once cooked.
- Stir in the taco seasoning along with 1/4 cup of water, allowing it to simmer for approximately 5 minutes until thickened.
- Spread the seasoned meat evenly across the bottom of the prepared baking dish.
- Layer the black beans, corn, and salsa over the meat.
- Pour the cornbread batter over these layers, smoothing it out to cover everything completely.
- Bake for 25-30 minutes, or until the cornbread is golden and a toothpick inserted into the center comes out clean.
- Once baked, sprinkle the shredded cheddar cheese and diced tomatoes on top and return to the oven for an additional 5 minutes to melt the cheese.
- Allow the casserole to cool for a few moments before slicing into portions. Serve warm, garnished with green onions, sour cream, and avocado if desired.
