A delicious twist on traditional tiramisu made with coquito, a rich and creamy Puerto Rican coconut rum drink.

Ingredients

  • 1 cup coquito
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups ladyfinger cookies
  • 1/4 cup cocoa powder

Instructions

  1. In a large bowl, beat the heavy cream until soft peaks form.
  2. In another bowl, mix together the mascarpone cheese, sugar, vanilla extract, and coquito until smooth.
  3. Fold the whipped cream into the mascarpone mixture until combined.
  4. Dip each ladyfinger in coquito, then layer in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers.
  6. Repeat layers and finish with cocoa powder on top.
  7. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a stronger flavor, let it sit overnight in the refrigerator.
  • Feel free to add a sprinkle of cinnamon for extra taste.
