- 1 cup coquito
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 cups ladyfinger cookies
- 1/4 cup cocoa powder
Instructions
- In a large bowl, beat the heavy cream until soft peaks form.
- In another bowl, mix together the mascarpone cheese, sugar, vanilla extract, and coquito until smooth.
- Fold the whipped cream into the mascarpone mixture until combined.
- Dip each ladyfinger in coquito, then layer in a dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Repeat layers and finish with cocoa powder on top.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a stronger flavor, let it sit overnight in the refrigerator.
- Feel free to add a sprinkle of cinnamon for extra taste.
