- 200 grams self-raising flour
- 200 grams unsalted butter, softened
- 200 grams sugar
- 4 large eggs
- 100 ml brewed coffee
- 100 grams walnuts, chopped
- 200 grams cream cheese
- 100 grams icing sugar
- 50 grams walnuts, for decoration
Instructions
- Preheat the oven to 180°C (350°F).
- Grease and line two 8-inch round cake pans.
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the brewed coffee.
- Gradually add the flour and mix until smooth.
- Fold in the chopped walnuts.
- Divide the batter between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- To make the frosting, beat the cream cheese and icing sugar until smooth and spreadable.
- Once the cakes are cool, spread frosting between the layers and on top. Decorate with additional walnuts.
Notes
- Ensure the butter is at room temperature for better mixing.
- Adjust coffee strength to taste if desired.
