This Coffee Walnut Layer Cake is a delightful combination of rich coffee flavor and crunchy walnuts, perfect for any occasion.

Ingredients

  • 200 grams self-raising flour
  • 200 grams unsalted butter, softened
  • 200 grams sugar
  • 4 large eggs
  • 100 ml brewed coffee
  • 100 grams walnuts, chopped
  • 200 grams cream cheese
  • 100 grams icing sugar
  • 50 grams walnuts, for decoration

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease and line two 8-inch round cake pans.
  3. In a bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the brewed coffee.
  6. Gradually add the flour and mix until smooth.
  7. Fold in the chopped walnuts.
  8. Divide the batter between the prepared pans and smooth the tops.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. To make the frosting, beat the cream cheese and icing sugar until smooth and spreadable.
  12. Once the cakes are cool, spread frosting between the layers and on top. Decorate with additional walnuts.
