Delicious and healthy coffee ginger energy bars perfect for a quick snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup brewed coffee
  • 1/2 cup crushed ginger
  • 1/4 cup chia seeds
  • 1/4 cup dark chocolate chips
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, almond butter, honey, brewed coffee, crushed ginger, chia seeds, dark chocolate chips, and salt until well combined.
  3. Press the mixture into a greased 8×8 inch baking dish.
  4. Bake for 20-25 minutes or until golden brown.
  5. Allow to cool before cutting into bars.
