  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brewed coffee
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas and mix in the softened butter.
  3. Add sugar, eggs, and vanilla; mix well.
  4. In another bowl, combine the flours, baking soda, and salt.
  5. Gradually add the dry ingredients to the banana mixture, alternating with brewed coffee.
  6. Fold in walnuts.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-65 minutes or until a toothpick inserted comes out clean.
  9. Let cool before frosting.
