Ingredients

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 1 package ladyfinger cookies
  • 1/2 cup brewed coffee
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, whisk together coconut milk, heavy cream, sugar, and vanilla extract until smooth.
  2. Fold in shredded coconut.
  3. Dip ladyfinger cookies in brewed coffee quickly and layer them in a dish.
  4. Spread half of the coconut mixture over the cookies.
  5. Repeat with another layer of dipped ladyfingers and the remaining coconut mixture.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, sift cocoa powder on top.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • Make sure to refrigerate for the best texture and flavor.
  • Can be garnished with extra shredded coconut or chocolate shavings.
