- 1 cup coconut milk
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
- 1 package ladyfinger cookies
- 1/2 cup brewed coffee
- 2 tablespoons cocoa powder
Instructions
- In a mixing bowl, whisk together coconut milk, heavy cream, sugar, and vanilla extract until smooth.
- Fold in shredded coconut.
- Dip ladyfinger cookies in brewed coffee quickly and layer them in a dish.
- Spread half of the coconut mixture over the cookies.
- Repeat with another layer of dipped ladyfingers and the remaining coconut mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, sift cocoa powder on top.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure to refrigerate for the best texture and flavor.
- Can be garnished with extra shredded coconut or chocolate shavings.
