  • 2 tablespoons agave syrup or honey
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 1 tablespoon fresh lime juice
  • Chopped fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine the diced eggplant with olive oil, sea salt, and black pepper. Toss until all pieces are well-coated. Spread the eggplant cubes evenly on the baking sheet.
  3. Place the baking sheet in the oven and roast the eggplant for about 20-25 minutes, turning the pieces halfway through to ensure they cook evenly and develop a golden-brown color.
  4. While the eggplant is roasting, create the glaze. In a saucepan set over medium heat, mix together the coconut milk, tamarind concentrate, agave syrup (or honey), soy sauce, onion powder, ground ginger, and lime juice. Stir the mixture continuously until it begins to simmer, then let it cook for 5-7 minutes until it thickens slightly.
  5. After the eggplant has finished roasting, take it out of the oven and pour the coconut tamarind glaze over the hot eggplant. Carefully toss the eggplant to ensure each piece is coated in the flavorful glaze.
  6. Return the glazed eggplant to the oven for another 5 minutes, allowing the flavors to blend beautifully.
  7. Once done, remove from the oven and let it cool for a few moments. Finish by garnishing with chopped fresh cilantro before serving.

  • For an extra layer of flavor, consider adding a sprinkle of crushed peanuts on top before serving.
