Delicious and healthy coconut matcha truffles that are easy to make and perfect for a sweet treat.

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 tablespoon matcha green tea powder
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate, melted

Instructions

  1. In a bowl, mix together shredded coconut, almond flour, maple syrup, matcha powder, vanilla extract, and sea salt until well combined.
  2. Form the mixture into small balls and place them on a parchment-lined tray.
  3. Chill the truffles in the refrigerator for about 30 minutes.
  4. Once chilled, dip each truffle into melted dark chocolate to coat and return to the tray.
  5. Refrigerate again until the chocolate has hardened.
  6. Enjoy your coconut matcha truffles!

Notes

  • Store the truffles in an airtight container in the fridge.
  • They can also be rolled in extra shredded coconut for added texture.
