Ingredients

  • 1 cup dried mango, chopped
  • 1 cup unsweetened shredded coconut
  • 1 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup cashew butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup chia seeds

Instructions

  1. In a large mixing bowl, combine the chopped dried mango, shredded coconut, almond flour, honey (or maple syrup), cashew butter, vanilla extract, salt, and chia seeds.
  2. Mix until the ingredients are well combined.
  3. Use your hands to roll the mixture into small balls, about 1 inch in diameter.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Chill in the refrigerator for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.

Notes
