- 1 cup coconut oil
- 1/2 cup MCT oil
- 1/4 cup lime juice
- 1/4 cup powdered erythritol or sweetener of choice
- 1/2 teaspoon lime zest
- 1/4 teaspoon sea salt
- 1/2 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine coconut oil and MCT oil until well blended.
- Stir in lime juice, erythritol, lime zest, sea salt, and vanilla extract.
- Pour the mixture into silicone molds or an ice cube tray.
- Place in the freezer until solid, about 30 minutes.
- Once set, remove from molds and store in the refrigerator.
Notes
- Keep refrigerated for a longer shelf life.
- Adjust sweetness to taste.
- Can be flavored with other extracts or citrus.
