- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsweetened coconut
- 1/4 cup butter
- 1 cup milk
- 3 eggs
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup dark rum
- 1/2 cup coconut cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, milk, and melted butter.
- Combine wet and dry ingredients, then stir in coconut.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes until golden brown.
- In a saucepan, heat rum and sugar to create a syrup.
- Pour syrup over warm cake and let soak.
- Serve with a drizzle of coconut cream.
Notes
- This dessert is best served warm.
- Add extra shredded coconut on top for garnish.
