A delicious coconut dessert that combines soft cake with a light rum syrup.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened coconut
  • 1/4 cup butter
  • 1 cup milk
  • 3 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup dark rum
  • 1/2 cup coconut cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together eggs, milk, and melted butter.
  4. Combine wet and dry ingredients, then stir in coconut.
  5. Pour the batter into a greased cake pan.
  6. Bake for 30-35 minutes until golden brown.
  7. In a saucepan, heat rum and sugar to create a syrup.
  8. Pour syrup over warm cake and let soak.
  9. Serve with a drizzle of coconut cream.

Notes

  • This dessert is best served warm.
  • Add extra shredded coconut on top for garnish.
