  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and diced
  • 6 to 8 tablespoons ice-cold water
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix the flour and salt in a large bowl.
  2. Incorporate the cold butter until the mixture resembles small pebbles.
  3. Gradually add ice-cold water until the dough holds together.
  4. Split the dough into two equal portions, shape into disks, wrap in plastic wrap, and chill for at least one hour.
  5. In a skillet, brown the ground pork and beef, draining excess fat.
  6. Add the diced onion and minced garlic, sautéing until soft and translucent.
  7. Add thyme, cinnamon, nutmeg, black pepper, and salt to the meat mixture, stirring well.
  8. Pour in beef broth and Worcestershire sauce, simmer for about five minutes, then remove from heat to cool.
  9. Preheat the oven to 425°F.
  10. Roll out one disk of dough and place it in a 9-inch pie dish, filling it with the cooled meat mixture.
  11. Roll out the second disk of dough, cover the filling, trim excess dough, and crimp the edges.
  12. Cut slits in the top crust for steam to escape and brush with beaten egg.
  13. Bake for 25-30 minutes until the crust is golden brown.
  14. Allow to cool for 10 minutes before slicing and serving.

Notes

  • For an extra kick, add a dash of cayenne pepper or finely chopped jalapeños to the meat filling.
  • Ground turkey or chicken can be used as a lighter alternative to ground pork and beef.
