- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, cold and diced
- 6 to 8 tablespoons ice-cold water
- 1 pound ground pork
- 1 pound ground beef
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 egg, beaten (for egg wash)
Instructions
- Mix the flour and salt in a large bowl.
- Incorporate the cold butter until the mixture resembles small pebbles.
- Gradually add ice-cold water until the dough holds together.
- Split the dough into two equal portions, shape into disks, wrap in plastic wrap, and chill for at least one hour.
- In a skillet, brown the ground pork and beef, draining excess fat.
- Add the diced onion and minced garlic, sautéing until soft and translucent.
- Add thyme, cinnamon, nutmeg, black pepper, and salt to the meat mixture, stirring well.
- Pour in beef broth and Worcestershire sauce, simmer for about five minutes, then remove from heat to cool.
- Preheat the oven to 425°F.
- Roll out one disk of dough and place it in a 9-inch pie dish, filling it with the cooled meat mixture.
- Roll out the second disk of dough, cover the filling, trim excess dough, and crimp the edges.
- Cut slits in the top crust for steam to escape and brush with beaten egg.
- Bake for 25-30 minutes until the crust is golden brown.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- For an extra kick, add a dash of cayenne pepper or finely chopped jalapeños to the meat filling.
- Ground turkey or chicken can be used as a lighter alternative to ground pork and beef.
