Delicious and refreshing cucumber sandwiches that are perfect for tea parties or a light snack.

Ingredients

  • 1 loaf white bread
  • 1 cup cream cheese, softened
  • 1 tablespoon fresh dill, chopped
  • 2 cucumbers, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons lemon juice

Instructions

  1. In a bowl, mix the cream cheese, dill, salt, pepper, and lemon juice until smooth.
  2. Spread the cream cheese mixture evenly over one side of each slice of bread.
  3. Layer the cucumber slices on top of the cream cheese on half of the bread slices.
  4. Top with the other half of the bread slices, cream cheese side down, and press gently.
  5. Trim the crusts off the sandwiches and cut into quarters or triangles.
  6. Serve immediately or refrigerate until ready to serve.

Notes

  • For a tasty variation, add thinly sliced radishes or smoked salmon.
  • Keep the sandwiches covered to prevent them from drying out.
