Classic Chocolate Éclairs are a delightful French dessert made from choux pastry filled with a rich creamy custard and topped with a layer of decadent chocolate icing.

  • Total Time: 1 hour
  • Yield: 12 éclairs 1x

Ingredients

Scale
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 2 cups pastry cream
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine water and butter and bring to a boil.
  3. Remove from heat and stir in flour and salt until a dough forms.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pipe the batter onto a baking sheet to form éclairs.
  6. Bake for 25-30 minutes until golden brown.
  7. Let cool before filling with pastry cream.
  8. Prepare chocolate glaze by melting chocolate and mixing in heavy cream and powdered sugar.
  9. Dip the top of each éclair in the chocolate glaze and let set.

Notes

  • For best results, use high-quality chocolate for the glaze.
  • Ensure the éclairs are fully cooled before filling to prevent sogginess.
