These Cinnamon Roll Macarons combine the flavors of a classic cinnamon roll into a delightful French pastry.

Ingredients

  • 1 cup almond flour
  • 1 cup powdered sugar
  • 3 egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 cup butter, softened
  • 2 cups powdered sugar (for filling)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until soft peaks form, then gradually add granulated sugar until stiff peaks form.
  4. Fold almond flour mixture into the egg whites.
  5. Pipe the mixture onto a baking sheet and let it sit for 30 minutes.
  6. Bake for 15-18 minutes.
  7. Let cool before filling with cinnamon buttercream.
  8. Mix softened butter, powdered sugar, cinnamon, and vanilla for the filling.
  9. Spread or pipe the filling between two macaron shells.
