Instructions

  1. Preheat your oven to 325°F.
  2. In a mixing bowl, blend the crushed graham crackers, melted butter, and 1/4 cup of sugar until the mixture resembles wet sand. Firmly press this blend into the base of a 9-inch springform pan to create a sturdy crust. Bake for 10 minutes, then take it out of the oven and allow it to cool completely.
  3. In a separate large bowl, whip the softened cream cheese and 1 cup of sugar together until the mixture is smooth and fluffy. Incorporate the vanilla extract and mix until fully integrated.
  4. Add the eggs individually, ensuring to mix thoroughly after each addition. Scrape down the bowl’s sides as necessary to ensure everything is well combined.
  5. In another bowl, whisk together the ground cinnamon, yogurt, and whipping cream until smooth. Carefully fold this mixture into the cream cheese batter, being cautious not to overmix.
  6. Pour the creamy filling over the cooled crust, using a spatula to level the surface.
  7. Bake in the preheated oven for 55-60 minutes, or until the center is just set but has a slight wobble. Once done, turn off the oven and leave the cheesecake inside with the door ajar for about an hour to cool gradually.
  8. After an hour, take the cheesecake out and let it reach room temperature. Then, refrigerate it for a minimum of 4 hours, or ideally overnight, to enhance the flavors.
