Ingredients

  • 1 pound pork tenderloin
  • 1 tablespoon olive oil
  • 1 orange, juiced and zested
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pork tenderloin into 1-inch medallions.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Season the pork medallions with salt and pepper; sear in the hot skillet for 2-3 minutes on each side until browned.
  5. In a small bowl, mix the orange juice, zest, honey, and cinnamon.
  6. Pour the orange mixture over the pork in the skillet.
  7. Transfer the skillet to the preheated oven and bake for 10-15 minutes until the pork is cooked through.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Serve with steamed vegetables or over rice for a complete meal.
  • Can substitute honey with maple syrup for a different flavor.
