- 1 pound pork tenderloin
- 1 tablespoon olive oil
- 1 orange, juiced and zested
- 1 teaspoon ground cinnamon
- 2 tablespoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the pork tenderloin into 1-inch medallions.
- In a large skillet, heat the olive oil over medium heat.
- Season the pork medallions with salt and pepper; sear in the hot skillet for 2-3 minutes on each side until browned.
- In a small bowl, mix the orange juice, zest, honey, and cinnamon.
- Pour the orange mixture over the pork in the skillet.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes until the pork is cooked through.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- Serve with steamed vegetables or over rice for a complete meal.
- Can substitute honey with maple syrup for a different flavor.
