- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 12 ounces semi-sweet chocolate, chopped
- 1 cup heavy cream
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ cup granulated sugar
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a tart pan.
- Bake the crust for 10 minutes, then remove from the oven and let cool.
- In a saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Pour the cream over the chopped chocolate and let it sit for 5 minutes. Stir until smooth.
- In a bowl, whisk together eggs, sugar, and salt. Gradually add the chocolate mixture and vanilla extract, stirring until fully combined.
- Pour the chocolate filling into the cooled crust.
- Bake for 25-30 minutes or until the edges are set but the center is slightly jiggly.
- Let the tart cool before refrigerating for at least 2 hours before serving.
Notes
- Best served chilled with a dollop of whipped cream.
- Can be made a day in advance.
