Ingredients

  • 3 tablespoons sugar
  • 3 large eggs, separated
  • 1 cup heavy cream

Instructions

  1. Melt the chocolate in a heatproof bowl over simmering water.
  2. In another bowl, whisk the egg whites until soft peaks form, then gradually add the sugar and whisk until stiff peaks form.
  3. In a separate bowl, beat the cream with vanilla extract until soft peaks form.
  4. Incorporate the egg yolks into the melted chocolate, then fold in the egg whites followed by the whipped cream.
  5. Divide the mixture into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • For a lighter mousse, use egg whites only and skip the yolks.
  • Serve with whipped cream or chocolate shavings on top.
