- 1 cup unsalted butter, softened
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, cream together the butter and powdered sugar until smooth.
- Mix in the vanilla extract.
- Gradually stir in the flour and salt until just combined.
- Roll the dough into balls and place them on a baking sheet.
- Bake for 12-15 minutes until the edges are lightly golden.
- Let cookies cool completely.
- Melt the chocolate chips in a microwave or double boiler.
- Dip half of each cookie in the melted chocolate and place on parchment paper to set.
Notes
- For a richer flavor, add a pinch of espresso powder to the dough.
- Make sure the cookies are completely cooled before dipping in chocolate.
