Deliciously buttery shortbread cookies dipped in rich chocolate for a perfect treat.

Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar until smooth.
  3. Mix in the vanilla extract.
  4. Gradually stir in the flour and salt until just combined.
  5. Roll the dough into balls and place them on a baking sheet.
  6. Bake for 12-15 minutes until the edges are lightly golden.
  7. Let cookies cool completely.
  8. Melt the chocolate chips in a microwave or double boiler.
  9. Dip half of each cookie in the melted chocolate and place on parchment paper to set.

Notes

  • For a richer flavor, add a pinch of espresso powder to the dough.
  • Make sure the cookies are completely cooled before dipping in chocolate.
