- 2 large bananas
- 1 cup smooth peanut butter
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- ¼ cup chopped nuts (optional)
Instructions
- Slice the bananas into 1-inch pieces.
- Spread a small amount of peanut butter between two banana slices to make a sandwich.
- Place the banana sandwiches on a parchment-lined baking sheet.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals until melted.
- Dip each banana sandwich in the melted chocolate and place back on the baking sheet.
- If desired, sprinkle with chopped nuts before the chocolate sets.
- Freeze for at least 1 hour until the chocolate is firm.
